Homemade fresh ginger-ale is any day better than packaged ginger-ale that is loaded with sugar. Here is a simple recipe that you can use to make ginger-ale at home.

Ingredients

  • 4 cups water
  • 2 cups peeled and chopped fresh ginger
  • 3 strips lemon peel, about 4 inches each
  • 1 1/2 cups granulated/powdered sugar
  • 3 quarts club soda, chilled

Method

  1. Mix the water, ginger, and lemon peel in a saucepan. Over moderate heat, bring to a boil. Reduce heat to low and cook, uninterrupted, for about 10 minutes.
  2. Add sugar and let it boil, stirring frequently until the liquid is decreased to 3 cups (about 15 minutes). Place a thin wire strainer over a large mixing bowl. 
  3. To extract the particles from the liquids, pour in the ginger syrup. The lemon peel should be discarded. 
  4. Allow it cool completely before putting it into a glass jar. Chill for at least 1 hour, or until completely cold. You may also keep it in the fridge for up to one week.
  5. Pour 1/4 cup ginger syrup and 1 cup cold club soda each serving over ice when ready to serve.
