Ingredients

  • 4 eggs
  • 4 Tomatoes
  • 1 onion 
  • 1 capsicum
  • ½ tsp Chilli powder
  • 2 cloves garlic
  • Olive oil
  • Salt & pepper
  • Paprika 

Recipe

  • Slice the vegetables and chop garlic
  • Make a puree of tomatoes
  • Heat the oil in a pan and add garlic cloves 
  • Add onion and saute it followed by adding bell peppers
  • Saute for a few minutes and add tomato puree
  • Add salt, pepper, and paprika as per taste 
  • Cook for some time till the oil in the puree starts to separate  
  • Create pockets in the pan with the ladle 
  • Pour one egg into each pocket 
  • Cover with a lid and let the egg set
  • Garnish with fresh coriander

Make this for breakfast, it will take around 20 minutes but rest assured you will crave it all the time once you have it.

Ingredients

  • 4 eggs
  • 2 whole-wheat bread slices
  • 1 tsp Oil 
  • Salt, Pepper & Oregano

Recipe

  • Break eggs in a bowl
  • Whisk the eggs, add some salt
  • Heat a skillet and add the beaten eggs
  • Stir the eggs until they are firm and cooked
  • Scramble the mix
  • Toast the bread
  • Put the cooked eggs on the sandwich and sprinkle oregano and pepper

3) Sausage-egg Burrito

  • 4 Sausages

  • 4 Eggs
  • Sliced bag of Mushroom 
  • 2 Bell paper
  • Handful of Spinach
  • ½ cup Grated cheese
  • Salt & pepper
  • Thyme
  • Cooking spray or oil

Recipe

  • Preheat the oven to 200 degrees
  • Chop all the vegetables including mushrooms, bell pepper, spinach
  • Whisk the eggs in a bowl
  • Add veggies and cheese to the eggs and stir gently
